All surfaces in your kitchen should be
of a high standard of cleanliness. Each surface should be cleaned – not
necessarily bleached – and dried before use.
All equipment should be washed and
checked prior to use.
Goggles, gloves and long sleeved
clothing (aprons) should be used, especially when using Sodium Hydroxide.
Sodium Hydroxide should be kept in a
container with lid. Labels showing how caustic and dangerous this ingredient
can be should be placed on the container.
